In the world of art, project can be loosely described as the process of creating any work of art. In sculpture it has a more specific meaning. It refers to a work that is created in a space for display in that space. In some cases that work may be transferred to other places, but more often it remains where it was first intended, or when it is removed it is disassembled. This makes that work ephemeral.
